Anti-Inflammatory Red Apple Broccoli Salad

The skins of red apples and purple onions contain the antioxidant anthocyanins that help reduce inflammation.  Broccoli is a great source of antioxidants too but specifically sulforaphane which has awesome anti-inflammatory properties and has been shown to keep that heart healthy.  Greek yogurt is a great source of probiotics that will put good bacteria in the gut to keep the body clean of toxins and the healthy fats will also help decrease inflammation in the body.

Recipe

1 Red Apple, cored and diced

1 c. Broccoli Florets

½ Small red onion diced (approx. 1/4th cup)

½ c. Plain Greek yogurt (at least 2% fat)

½ lemon, juiced

1 garlic clove, minced

Pinch of salt

1 tbsp of water (optional)

Directions

In a medium-sized bowl, stir together the apple, broccoli, and red onion, set aside. In a small bowl, whisk together the Greek yogurt, lemon, garlic, and salt.  If dressing looks really thick, add the tbsp of water.  Mix the dressing into the apple/broccoli mixture.  Add additional salt to taste.

*If looking to add a little sweetness to the salad, add ½ c. of halved red grapes for additional anthocyanins.
